Georg Ludwig von Bobenhausen had the castle built between 1692 and 1697. Friedrich Wilhelm Ernst von Bobenhausen had a second wing added in Baroque style by Balthasar Neumann between 1746 and 1747. In 1924, the castle came into the possession of the industrial family Georg Schäfer and remains in their possession today. In 1933, the Erste Automatische Gußstahlkugelfabrik, formerly Friedrich Fischer, AG, owned by the Schäfer family, established a recreation home for employees and retirees in the castle. After the temporary confiscation of the castle and estate in 1945 by the Americans, the home operations were resumed and continued until 1958. Subsequently, the new castle served as a depot for Dr. Georg Schäfer's painting collection until it moved to the newly built Museum Georg Schäfer in Schweinfurt in 2000.

Schloss Obbach includes an agricultural estate of 275 hectares, which has been managed according to the principles of organic-biological agriculture since 1998. The estate was selected by the Federal Ministry of Agriculture as a demonstration farm for organic farming.
